To merge two AMC files, either import one in another, or both in a new catalog. You can do that with File -> Import.

For your second question, you mean change the value of a field in all movies?

Yes y, change the value of a field in all movies.

I don't understand what you want change.
The fields in main movie aren't editable (or edit source code and recompile). Custom fields are all editable and more more more (great idea by @soulsnake)

There is a script named "update fields" that allows to do that easily (tools -> scripting)

I have seen and tried a little harder to use, but I'll learn.
